The Bee's Knees was a prohibition era favorite made with honey and lemon juice. One can guess that the honey and lemon juice was used to mask the nasty flavors of the common bath tub gin that was so prevelant during the period.
1.5 oz Gin
1 tsp honey
1 tsp Lemon Juice
Lemon Twist
Add the honey and lemon juice to a shaker/glass and swirl until the honey has dissolved (don't try over ice as the honey will thicken or crystallize.) Add gin and ice and shake. Strain into a martini glass and garnish with a lemon twist.
